I was lucky enough to be introduced to this vibrant and delicious herby-yet-spicy sauce on an Argentinian finca, where our hosts held an asado, with a lamb roasted on an open fire. Chimichurri is a traditional sauce for barbecue meat, and, over the lamb, it was perfect – but I liked it even better on the baked potatoes.

Ingredients

  • 100 g/ oz flat-leaf parsley, finely chopped

Method

Combine all the ingredients in a bowl, then taste and adjust the seasoning with salt. If you can, leave the sauce to sit for 15 minutes before you use it.
