Salsa verde is the Spanish meaning “green sauce”. It’s based on tomatillos and chilli, which are sautéed with other flavourings until slightly charred, then blitzed together. In Mexico, they like a lot of chilli, but I have dialled the heat down a bit here. Feel free to dial it up again! The sauce is good on tortillas or flatbreads to go with any grilled (broiled) meat.
