In Thai cuisine, there are rich, hearty broths creamy with coconut cream, that are a meal in themselves; curried soups (like tom yum), prickly with the heat of bird’s eye chillies; and clear, light soups, meant to be an accompaniment to main dishes and to cleanse the palate. This dish is a cross between a curry and a creamy soup. The pumpkin, being naturally sweet, lends its creaminess and flavour to the coconut cream that serves as the base of the soup base.
