Popularly known as red ruby, this attractive dessert is made by dyeing fresh water chestnut pieces with red food colouring, then coating the pieces with tapioca flour and boiling them to produce a translucent, starchy coating. The ‘rubies’ are then served together with chilled, sweetened coconut cream. The street food version of this popular dessert features jackfruit, corn and longan mixed in and topped with plenty of shaved ice. Tub tim grob is best enjoyed on a hot day, to stave off the
