A classic, must-have recipe. Tender, crunchy, and not too sweet.
Fill a medium saucepan one third with water and place over medium heat. Bring to a simmer. This is the base for your bain marie, or double boiler. Use a bowl that will nestle on top of the saucepan without touching the simmering water. Whisk egg whites and sugar together in the mixing bowl and set it on top of the simmering water. Continue to whisk mixture vigorously until sugar has dissolved,
