Inspired by our friend Sonoko Sakai of Common Grains, Cecilia developed this cookie for Roxana Jullapat and her fundraiser for the Edible Schoolyard in Los Angeles. We love our community of fellow cooks and bakers.

Ingredients

  • ¾ cup + 2 tablespoons (200 g) unsalted butter, softened

Method

In the bowl of a stand mixer fitted with paddle attachment, cream butter, sugar, and vanilla bean seeds on low speed for 30 seconds.

Add flours and salt and mix on low speed until just incorporated, about 30 seconds. Add groats and mix on low speed for 15 seconds.

Turn out dough onto a lightly floured surface and form into a ½-inch-thick rectangle. Wrap with plastic wrap and chi
