Prepare konbu dashi and set aside.
Peel apple, daikon and carrot and cut each of them into 8 pieces.
In a pot, add apple, daikon, carrot, soy sauce, mirin and sake into konbu dashi and bring to a boil. Lower heat and simmer for 20 minutes. Skim off and discard any foam that surfaces from time to time.
Add salt to taste, spoon into 4 serving bowls and serve hot.
