Soymilk Mousse

Ingredients

  • 50 ml ( fl oz) soymilk (unsweetened)
  • 130 g ( oz) silken tofu
  • 1 Tbsp raw sugar
  • 1 Tbsp maple syrup
  • 50 g ( oz) banana

Sugar Syrup

  • 30 g (1 oz) raw sugar
  • 20 ml ( fl oz) water

Method

To prepare the sugar syrup, combine sugar and water in a saucepan over low heat. Gently stir until all sugar is dissolved. Set aside to cool.

Add all ingredients (soymilk, tofu, banana, sugar and maple syrup) in a blender. Blend until smooth. Divide into 4 portions and keep refrigerated for about 2 hours.

To serve, add sugar syrup.
