Zia Bruna was my dad’s aunty, and she was a great cook – one of the best in a family of great cooks. This is how she used to prepare snails, which are traditionally eaten in Lombardy. This aunty and her brother, my nonno Bruno, used to go up into the mountains after the rain and collect the snails, then keep them in a bird cage for three days. During this time, they’d feed them on polenta to purge them. Here in Australia I buy snails from Snails Bon Appetite in the Hunter Vall
