This is a traditional dish from the province of Mantua, featuring the pumpkins that it is renowned for growing on its foggy, humid plains. Mantuans drain the pumpkin in muslin to remove some of the excess moisture and concentrate the flavour, but I find it easier to cook the purée to dry it out. These flavoursome tortelli are always part of the traditional Christmas Eve meal in Mantua. If you can’t get apple mustard fruits, use another type.
