In Italian or English, everyone knows what panforte is – literally ‘strong bread’. In most regions it contains chocolate, however in Lombardy we make a paler version without it. I didn’t like it when I was a kid, but my nonno told me it was called panforte because it would make me strong – it worked. I dutifully ate it and now I like it (and I’m strong!). You’ll need a sugar thermometer for this recipe.
