Ingredients: ½ bay leaf; 1 sprig of thyme; 2 sticks of celery, roughly sliced; 1 medium-sized onion stuck with cloves; 1 clove of garlic; 3 or 4 large carrots, roughly chopped; 400 g turnips, roughly chopped; 100 g parsnips, roughly chopped; 350 g leeks; 1 part vodka of your choice [natural flavour]; 2 kg lean beef; 1.5 kg shin of beef [with bone, broken down into chunks by your butcher to maximise the flavour!]; sea salt; 4 parts consommé [see below]

Method

Cut up the beef and put it all into a big stockpot. Add 7 litres of cold water. Bring to the boil and carefully remove the scum that forms on the surface. Season with coarse salt (it is better to adjust seasoning at the end than to add too much at the beginning!). Add the carrots, turnips, parsnips
