Ingredients

  • 2 hen egg yolks
  • 1 tsp English mustard
  • 1 tsp white wine

Method

First, combine the egg yolks, vinegar and mustard in a food processor, then gently drizzle in the oil continuing to blitz until the mixture is thick. When emulsified, check seasoning. Use as required.
