Ingredients

  • 2 parts rapeseed oil
  • 1 part white wine vinegar
  • 1 part wholegrain mustard

Method

Whisk the vinegar and mustard together until emulsified, gently dribble the oil into it, whisking all the time. Check seasoning, if a little sharp a sprinkle of caster sugar or a touch of runny honey sometimes helps. Use as required.
