Country Ham and Redeye Gravy

Children, I know I bombard y’all with a lot of Southern dishes—and a lot of ’em you’ve probably eaten at some time or other. Well, here’s one not all Southerners have tried: redeye gravy. Believe me when I tell y’all that country ham and redeye gravy is as Southern as it gets. It’s so perfectly Southern that even I won’t give it a twist. If you’re not wide-eyed and wooly before you eat it, you most definitely will be after.
