Sweet Tater Fritters

My Grandpa and Grandma Creech had sweet taters at just about ever’ meal. They even fried ’em up for breakfast. Whenever they had leftover sweet taters, Grandma Creech would make sweet tater cakes, by just addin’ flour and egg and tossin’ ’em in a fryin’ pan. To give Grandma’s tater cakes a twist, I thought I would add some spices and fry them up into crispy fritters. I think she’d be proud of these tasty li’l bites that she helped inspire.
