Growin’ up, I loved a cheese sandwich with a fresh garden ’mater. Who knew this was the beginning of my love for caprese salads, which happen to be my inspiration for this twist: an upscale grilled cheese sandwich with all the flavors of a caprese salad.

1 cup mayo
8 slices sourdough bread

Method

Place the balsamic glaze ingredients in a saucepan over medium heat. Reduce by half, stirring often. Do not boil. When reduced, take off heat and let cool.
Once cooled, mix 2 tbsp. balsamic glaze with the mayo. Reserve remaining glaze.
Place 4 slices bread on parchment paper, and spread a thin layer of the mayo over bread. Place 2 slices cheese, 2 slice
