’Maters and bacon are truly a match made in heaven—hello, BLT. Fried green ’maters are a bona-fide Southern delicacy, and I think we all know how I feel about bacon. So, is there any wonder that I decided to do a twist by pairin’ Southern-fried green ’maters with crisp, smoky bacon and givin’ it a li’l zing with some lemon aioli?
