Roasted Beets and Goat Cheese Salad

My first memories of beets were of the pickled variety. As I’ve gotten older, I’ve come to appreciate just how versatile beets are. I love roasted beets by themselves or added to a salad. My twist on beets is to give ’em the starring role in their very own sweet and tangy salad. The simple pairin’ of roasted beets and fresh, creamy goat cheese may be the best thing since peanut butter met jelly.
