Pimento-Cheese Waffle Sandwich

In the county where I grew up, they gave out food items once a month, called commodities, to help folks out. Let me tell y’all, you ain’t had ’mentor cheese, as I call it, any better than when it was made with that government commodity cheese. Some of y’all know what I’m talkin’ about. I loved ’mentor cheese with crackers or on a whitebread sandwich. To give this traditional Southern spread a twist, I decided to make it a bit creamier and present it on a crunchy, cornmeal waffle.
