Uptown Black-Eyed Pea Salad

Lord Honey, don’t y’all dare think of startin’ the new year without the epitome of Southern soul food, black-eyed peas. Every Southerner worth his salt knows that eatin’ black-eyed peas on New Year’s Day ushers in good luck for the year. My aunt Brenda made a salad with black-eyed peas in it, and I’ve used it as my inspiration in this tasty twist on the South’s good-luck legume.
