Country Cornmeal Salmon Patties

Salmon patties, using canned salmon, date back to the Great Depression in helping families stretch their food budget and put protein in their diets. Thank goodness they became ingrained in the Southern food culture and are still around today as an affordable way to put a tasty meal on the table. I think of salmon patties as country folks’ twisted version of a crab cake.
