Fried catfish is as country as Hee Haw. My twist on this country catch is to give it a lot of heat with a spicy breadin’ and dippin’ sauce, and then cool it down with a fresh and flavorful corn relish. This was one of my signature dishes that the judges loved on Food Network Star.

Ingredients

  • cup all-purpose flour
  • cup yellow cornmeal
  • 2 tsp

Method

  • In a zip-top bag, shake flour, cornmeal, salt, pepper, cayenne, and lemon pepper until combined.
  • In a mixing bowl, whisk together buttermilk, egg, hot sauce, and Old Bay Seasoning.
  • Place the catfish in a zip-top bag and add the buttermilk mixture. Seal and put in the fridge for 2 hours.
