Blueberry-Lemon Hand Pies

Hand pies originated as a means of convenience. Easy to pick up and take on the go, they were perfect for workers to grab after eatin’ lunch or to pack in lunchboxes without muss or fuss. The most traditional “handheld” in the South is a fried apple pie, but y’all can put just about anything into one, from sweet to savory. My twist is to make this cute li’l pastry with the burst of sweet blueberries and the tartness of tangy lemon. But don’t think y’all have to take just one of these
