Hummingbird Tart

A hummingbird cake is an heirloom cake that has been passed down through many Southern generations. It’s no wonder that one of the most esteemed county-fair blue ribbons a Southern baker can earn is for hummingbird cake. Now, it takes some guts to twist such a generational favorite, but I put on my big-boy whitey tighties on and did it. I made a deconstructed hummingbird cake fly straight into a tart shell, with all the tropical flavors that our ancestors intended.
