A mayo cake is a depression-era cake, using mayo in place of eggs and oil. This recipe has been passed down through generations ever since, makin’ it a heritage recipe that allowed folks to enjoy a good chocolate cake durin’ hard times. It was obviously a recipe that worked, because it’s still around today. A traditional mayo cake has a chocolate icin’, so I decided to give it a twist by makin’ cupcakes and slatherin’ ’em with a homemade coconut-pecan frostin’.
