Creamy red beans and rice are classic Louisiana eats, but they’re showing up on restaurant menus in all sorts of new ways too. When a new restaurant, Capdeville, opened in the Central Business District of downtown New Orleans, I was amazed to see something on the menu they called “Fried Red Beans and Rice,” a fresh take on a city standard that I’d never considered before. I quickly ordered some to see how it would compare with the classic dish.
