Another classic from the Lombard family dinner table.
Season the chicken pieces with salt and pepper.
Add the oil to a large, deep skillet and heat until smoking. Add the chicken pieces and brown on both sides. Reduce heat and cover for 25 minutes, checking periodically to ensure that nothing sticks or burns. Remove the chicken pieces and set aside.
Add the flour to the remaining oil and stir together over low heat until golden bro
