Pick through the beans to remove any rocks. Wash beans and cover with water.
Add onion, bell pepper, ham hock, and garlic. Cook over a low flame until tender, about 2 hours. Add salt, pepper, and margarine, then cook for 5 minutes more. Serve over rice with Louisiana hot sauce and buttered French bread.
