Peel and slice the mirliton into fry-sized pieces. Parboil the fries in boiling water for 10 minutes or until tender on the outside and firm inside.
In a large bowl, combine the rice flour, all-purpose flour, salt, turmeric, mustard, paprika, and cayenne. Add just enough ice water to make a smooth batter. Drop the mirliton slices into the mixture and make sure that all are coated. Refri
