Combining steak with salad is blasphemy to some people, but with the right flavors it can be really delicious. Since you have flank steak at the ready, this salad can be made practically on a whim.

One key to making this salad really pop is the steakhouse dressing. Take the time to try it out. It takes maybe 3 minutes to whip up and will blow any store-bought dressing out of the water.


Steakhouse Dressing

  • 2 tablespoons finely minced shallot
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • Dash of Worcestershire sauce
  • Salt and pepper
  • Hot sauce
  • 8 ounces sliced flank steak
  • 1 cup cherry tomatoes, halved
  • 1 large roasted red pepper, sliced
  • 2 scallions, minced
  • 4 cups various greens: arugula, spinach, etc.
  • ½ cup crumbled blue cheese, garnish


    1. For dressing: Combine all ingredients in a bowl or salad dressing shaker.
    2. Slice flank steak thinly and prep tomatoes, pepper, and scallions.
    3. Add greens to a large bowl and drizzle with dressing. You probably won’t need all the dressing. It’s very flavorful, so start light with it. Toss greens with dressing to coat well.
    4. Plate greens, allowing excess dressing to remain in the bowl. Top with steak and vegetables. Garnish with crumbled blue cheese and serve immediately.
