Potatoes are best, in my opinion, when they are super crispy. Since we already have cooked potatoes on hand, we don’t have to worry about cooking them all the way through. All we have to do is crisp them up in a hot oven. The result is one of my absolute favorite sides.

Besides being delicious, it’s also a lot of fun to smash these guys. If you have kids, give them a mallet and let them whack away!

  • 4 baked potatoes
  • ¼ cup olive oil
  • Salt and pepper
  • ½ teaspoon red pepper flakes
  • Hot sauce or ketchup, for dipping

    1. Preheat oven to 400°F.
    2. Leave the skins on the potatoes and cut them into sixths. If you have really large potatoes, cut them into eighths.
    3. Using a kitchen mallet or really anything heavy, gently smash the potatoes until they are flat. It’s okay if they fall apart.
    4. Lay the smashed potatoes on a baking sheet and drizzle liberally with olive oil. Sprinkle with salt, pepper, and red pepper flakes.
    5. Bake potatoes until they are very crispy, 20 to 25 minutes. Flip the potatoes once, halfway through.
    6. Serve as a side with hot sauce and/or ketchup.
