Curried Double Baked Potatoes

When it comes to saving time, double baked potatoes don’t really make sense. You are basically cooking the same thing twice, so it’s not uncommon for it to take two hours to make a double baked potato from scratch. We can cut that down pretty substantially by using our leftover potatoes.

The curried paste for these is really delicious, but if it’s not your style, the potatoes are good on their own as well. With the curry paste, though, this is one of my favorite recipes in this book
