Honestly, almost anything can be good on a pizza. But potatoes are one of the most underrated toppings in my opinion. For this version I went the rustic route and left the potatoes with the skin on, just roughly cubing them. If you want to change it up a bit, you can mash the potatoes and use them in place of a red sauce.

I use my standard pizza dough recipe (at right), but feel free to use store-bought dough.

Ingredients

Nick’s Pizza Sauce (makes 3 cups)

  • 1 can (15 ounces) tomato sauce
  • ½ cup water
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • 2 teaspoons dried parsley
  • Salt and pepper
  • Red pepper flakes (optional)
  • 2 (8-ounce) pizza dough balls
  • Cornmeal or flour, for dusting
  • 1 cup pizza sauce (more if you like it saucy)
  • 14-16 ounces mozzarella cheese, grated
  • 1 large baked potato, diced
  • 1 cup fresh or frozen sweet corn
  • 1 Serrano pepper, diced
  • Salt and pepper
  • Olive oil (optional)
  • 1 handful fresh basil, minced

    Method

    1. To make the pizza sauce: Combine everything in a bowl and let sit for a few minutes.
    2. To make the pizza: Preheat oven to 500°F.
    3. Place a pizza stone in the oven and allow it to heat up for at least 20 minutes before baking pizza to make sure it’s very hot.
    4. Let dough come to room temperature and then roll it out thinly on a lightly floured surface. The dough should roll out to about 10 to 12 inches in diameter.
    5. Lay dough onto a pizza peel, lightly dusted with cornmeal or flour.
    6. Add a light coating of sauce to dough. Then add cheese, potatoes, corn, and peppers. Season the pizza well with salt and pepper. Optionally, you can toss the diced potatoes with a tablespoon of olive oil before adding them to the pizza, so they will crisp better. They shouldn’t be super oily though.
    7. Slide the pizza onto the preheated pizza stone and Bake for 12 minutes.
    8. When the pizza comes out of the oven, top with fresh basil. Slice and serve immediately!
