Honestly, this stew doesn’t take very long even if you start with dried lentils. Using cooked lentils almost makes it too easy. You could make this sucker on a Tuesday after working a double. It’s just that easy. Thirty minutes estimates that you are the slowest person on earth. I bet you can bust this out in even less time and have a delicious and healthy dinner on the table.
In my opinion, the cumin yogurt isn’t really optional for this dish. The stew really needs this lemony, creamy addition to round out all the flavors. In other words, the yogurt takes this stew to another level.
