Like most leftover recipes, the ones in this chapter can work with almost any leftover bread that you happen to have around. That said, I did try to pick recipes that work best with a nice, crusty bread like the one you’ll get out of your no-knead loaf.
For my money, there’s no better way to start the day than with a few slices of buttered crusty bread alongside a few perfectly cooked, over-easy eggs. This dish is a spin on that meal, but the eggs actually cook in your bread slice.
