Panzanella salad is a classic way to use stale bread. In fact, you have to have stale bread to make it. Fresh bread just won’t work. This salad is traditionally made with very fresh and ripe summer tomatoes, and you can definitely use those if they are in season. But by substituting sun-dried tomatoes for the summer tomatoes, you can make this recipe any time of the year.
I like to keep my version of this salad simple, but the salad is flexible and you should feel free to add any veggies that fit your fancy. Try artichoke hearts, chickpeas, or fresh sweet corn.
