These are traditional tacos. That means they aren’t slathered in gooey cheese and overloaded with stuff like lettuce, tomatoes, and sour cream. The focus of these tacos is the pork–as it should be. There are a few basic, traditional toppings, but none of them overpower the delicious pork flavors.
I prefer corn tortillas for these guys, but flour tortillas are okay too. If you’re feeling frisky, light up your gas grill or gas burners on your stove and toast the tortillas for a few seconds per side directly over the flame. Just flip them with some tongs and get a light sear on the tortillas. That makes for one amazing taco.
