There are more ways to cook tofu than ways to cook a steak, but the key to cooking tofu correctly almost always involves really high heat. For my money, grilling it is easiest. The other benefit of grilling tofu is that you can grill a ton at a time, which means you can make enough tofu in one batch for a whole week of meals.
This grilled tofu is fantastic as a meal served with rice and steamed veggies, but you can also use it right away in many of the supporting recipes in this chapter. Once the grilled tofu has cooled down, store it in an airtight container or plastic bag in the fridge for seven to ten days.
