In the summer months this is the go-to breakfast in our house. You might think that a smoothie isn’t substantial enough to get you through the day, but the tofu adds lots of protein, and the jumbo serving makes it filling.
This is the one recipe in this chapter that doesn’t work with the grilled tofu recipe. You can use any firmness of tofu for this smoothie, but definitely don’t use cooked tofu. Reserve a block of it uncooked to toss into this quick breakfast.
