This is one of those recipes that will look like a mistake when you toss all the ingredients in the bowl. It doesn’t have much flour and has a lot of granola. Just go with it! The resulting muffins are dense and flavorful and really delicious with a small pat of butter and a cup of coffee.


  • 2 cups granola
  • 1 cup all-purpose flour
  • cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon table salt
  • ¾ cup buttermilk (or milk)
  • ¼ cup unsalted butter, melted and cooled
  • ¼ cup yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract


    1. Preheat oven to 375°F.
    2. Mix together granola, flour, brown sugar, baking powder, cinnamon, and salt in a medium bowl.
    3. In a separate smaller bowl, whisk together buttermilk, melted butter, yogurt, egg, and vanilla until well combined.
    4. Stir wet ingredients into dry ingredients until just combined. Try not to overmix the batter.
    5. Spoon batter into a lightly greased muffin tin. Fill the tins almost to the top. You should get about twelve muffins.
    6. Bake muffins for 18 to 20 minutes. Test a muffin to make sure it is cooked in the center. Let muffins cool for a few minutes before eating. They are best eaten right away, warm, with a little butter.
