If you find yourself with an annoyingly small amount of granola left over, this is a perfect recipe for it. It’s a quick and simple three-ingredient salad with a homemade dressing that brings all the ingredients together. You can use almost any granola for this recipe, but I would avoid the granola recipes with chocolate.

Ingredients

  • ¼ cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoo

Method

  1. Whisk together the yogurt with the lemon juice, buttermilk, honey, and a Pinch of salt. If you don’t have buttermilk, you can substitute normal milk, but buttermilk works best.
  2. Divide spinach between two bowls and sprinkle with a few dried cranberries.
  3. Drizzle salad dressing over greens and top
