“You want me to eat granola for dinner, ” said my very patient, very loving wife.

“Absolutely, ” I replied, a bit hesitantly. She took a first bite and I crossed my fingers under the table.

“Oh, yeah. This’ll work, ” she said.

It most certainly does work. In fact, a large one of these plus a side salad makes for a really delicious dinner. It wouldn’t be a bad brunch item either!


  • 4 large sweet potatoes
  • 1 cup granola
  • Pinch of salt
  • 3-4 tablespoons maple syrup
  • Chopped chives


    1. Take a fork and poke a few holes in each potato. Bake on a sheet pan at 350°F for about an hour. When they are fork tender, they are done. In a Pinch you can also wrap them in paper towels and microwave them on high for 8 to 10 minutes until tender.
    2. Remove potatoes from oven (or microwave) and slice them open down the center. Use a fork to lightly mash the flesh.
    3. Top each potato with about ¼ cup granola, a Pinch of salt, a drizzle of maple syrup, and some chopped chives. Serve immediately!
