This might go down as the fastest recipe in this entire book. But that doesn’t mean that it isn’t really tasty. Whatever you do, Don’t forget the mint. It totally makes the sandwich. Traditionally these sandwiches have the crusts cut off, but that’s obviously not necessary. It just looks cleaner.
In my opinion, these little sandwiches work best as an appetizer or served with afternoon tea if that’s your thing.
