This might go down as the fastest recipe in this entire book. But that doesn’t mean that it isn’t really tasty. Whatever you do, Don’t forget the mint. It totally makes the sandwich. Traditionally these sandwiches have the crusts cut off, but that’s obviously not necessary. It just looks cleaner.

In my opinion, these little sandwiches work best as an appetizer or served with afternoon tea if that’s your thing.


  • 1 large cucumber
  • 8 ounces cream cheese
  • 1 tablespoon minced fresh mint
  • ½ teaspoon garlic powder
  • ½ teaspoon granulated onion
  • 8 slices white bread
  • 4-6 ounces (1 scant cup) flaked cooked salmon
  • Kosher salt
  • Smoked paprika, for sprinkling


    1. Run your vegetable peeler down the sides of the cucumber, leaving streaks of peeled cucumber alternating with streaks of non-peeled cucumber. Slice cucumber into thin rounds.
    2. Mash together cream cheese, fresh mint, garlic powder, and granulated onion.
    3. Cut crusts off bread and smear four slices with the cream cheese spread. Top with flaked salmon and then a layer of sliced cucumbers. Sprinkle cucumbers with kosher salt.
    4. Top each sandwich with another piece of bread and slice sandwiches into quarters. Sprinkle sandwiches with smoked paprika and serve immediately.
