Method

Day One

Herb-Roasted Salmon and rice with side salad.

Plan Ahead: Bake an extra side of salmon (about two pounds) and cook at least a pound of rice so you have plenty left over.

Meal Time: 35 minutes

Day Two

Pink and Green Penne with a side salad.

Meal Time: 30 minutes

Day Three

Chipotle Salmon Tacos with chips and salsa.

Meal Time: 30 minutes

Day Four

Arroz Mixto (double recipe for four) is one of my favorite midweek fast dinners.

Meal Time: 20 minutes

Day Five

Chicken and Rice Soup with garlic bread or just crackers and/or a side salad.

Meal Time: 45 minutes
