These gently sweetened, high-protein granola bars are soft and delicate, unlike the often dry, cardboard-like, commercial granola bars or fruit-and-nut bars. These tender treats are filling and perfect for breakfast or a snack on the run. Plus, they’re loaded with chocolate chips and don’t require any baking. What could be better?

Ingredients

  • ¾ cup no-salt-added creamy peanut butter (see tip)
  • 3 tablespoons pure maple syrup

Method

Lightly oil an 8-inch square baking pan.

Put the peanut butter, maple syrup, rice syrup, vanilla extract, and optional salt in a medium bowl. Stir until smooth and well combined. Add the rolled oats, chocolate chips, optional cranberries, optional walnuts, and coconut.
