Don’t shudder, but this recipe uses packet mash… The trouble with fish cakes is the chore of making the mash before you have even started. Added to the other flavours, the texture of packet mash works really well here and no-one will know. This recipe is also fabulous made with other fish.

Ingredients

  • 2 portions of packet mash
  • 150–200 g fresh crab meat
  • ½ onion, finely chopped

Method

  1. Make the mashed potato according to the packet.
  2. Put the crab meat, onion, chopped pickle, coriander and potato in a bowl and gently mix all the ingredients together with your hands. Taste and season. Add the egg yolk and mix well. Form into 4 large or 8 small crab cakes and roll in the breadcrumbs.
