  • 6 large sheets filo pastry (see tip for Fresh asparagus filo)

Method

  1. Follow the recipe to make the ragout. Cut each salmon fillet into 12 slices.
  2. Lay a filo sheet on a clean work surface and brush with melted butter. Cut into 4 pieces and place a piece of salmon on each. Season and wrap each piece up into a parcel. Place onto an oiled baking sheet. Make up to 6 hours ahead and store in the
