Don’t think of mayonnaise simply as a sandwich filling – it is a perfect ready-to-use ingredient made from eggs and oil. In this recipe the oil soaks into the crumb and makes it crispy and the egg sets and sticks the crumb to the fish. The result is a very light crumb coating to your fish.

Ingredients

  • 4 tablespoons breadcrumbs (see tips)
  • 1 tablespoon dried, grated parmesan

Method

  1. Make the breadcrumbs and mix with the parmesan in a shallow bowl.
  2. Mix the mayonnaise with the pesto in another bowl. Season with salt and pepper.
  3. Place the salmon in the bowl with the mayonnaise/pesto and coat all over. Then roll the fish in the crumbs. Place onto a baking sheet.
