We had afternoon tea to celebrate Mother’s Day this year. We all made different things to bring and we had a table full of goodies. Hattie, my niece and self-confessed cake-baking addict, brought a selection of her cup cakes. She makes fairy cakes in muffin cases and uses softer icing so it sets level on the top.

Ingredients

For the Basic Cup Cakes

125 g soft butter (see tips)
125 g caster sugar

Method

Beat the butter and sugar together using a wooden spoon or electric whisk until smooth and pale. Add the eggs one at a time and beat again. Fold the flour in by hand and add the milk. Spoon into muffin cases and bake for 15 minutes
